Basic Granola Recipe

Do you like cereal but don't like the high sugar content and the fact that it is over processed? Try making your own granola. It's healthy and fun. Let the kids stir the ingredients together and watch it bake; let it cool, add some dried fruit or nuts, and enjoy a bowl of granola cereal topped with Almond Breeze or milk for breakfast.

Basic Granola Recipe:

4 cups rolled oats (not quick cooking or instant!)                       
1/3 cup raw organic coconut oil or other cooking oil            
1/4 cup raw honey
1/4 cup pure maple syrup (light or dark)

Heat oven to 300 degrees. Line baking sheet (metal cookie sheet with a rim) with parchment paper. Pour the oats into a very large bowl. In a smaller bowl combine the oil, honey, and maple syrup. Pour over oats; stir together well. Scrape the granola onto the baking sheet and spread out evenly.  Bake for 25-30 minutes, stirring after 15 minutes or so. Continue to stir every five minutes or so until granola is lightly browned; remove from oven and let stand for about ten minutes before transferring to a large bowl. Let stand in bowl until completely cooled. If you wish, at this point you may want to mix in other desired ingredients. There are some suggestions below. Store granola in an airtight container in a cool, dry place.

Great additions:
sunflower seeds
raisins
other dried fruit
chia seeds                                                                          
sesame seeds
sliced almonds, or other chopped nuts
shredded unsweetened coconut
poppy seeds
ground cinnamon, or other baking spices

I usually double the recipe and it lasts our family of four about a week because the kids love this stuff so much. You can also substitute fruit juice concentrate for one of the 1/4 cups of syrup or honey. I have tried omitting the honey and using a few packets of stevia mixed with the maple syrup, and that works also. Or you can use the stevia drops. Variations on this basic recipe are endless. Have fun with it!
