My baking project this morning:
Pumpkin Oatmeal Muffins
1 cup WW flour
1/2 cup brown sugar
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp all spice
1/4 tsp ginger
1/4 tsp ground cloves
1 tsp cinnamon
1/2 tsp sea salt
1. Mix the above ingredients together - I used a stand mixer.
2. In a separate bowl beat together:
1 egg
1/4 cup almond milk (or coconut, soy, dairy milk, whatever you have)
1/4 cup safflower oil
3/4 cup canned pumpkin
3. Gradually add wet mixture to the dry mixture. Beat while scraping the sides. Stir into this:
1 cup old fashioned oat meal
1/4 cup toasted or raw pumpkin seeds
Scrape by spoonfuls into lined muffin tins. Bake at 375 degrees for 20 min. Makes about 16.
